These tortillas are easy to make and wonderfully soft. Let the dough rest in the fridge for 30 minutes before rolling it out. This allows the gluten to relax while the fat firms up slightly.
Traditionally, tortillas are cooked in a pan, but I’ve found it far more effective to make them in a blazing hot pizza oven.
Store them under a cloth after cooking - preferably with a piece of foil underneath. The condensation helps keep them soft and delicious. They are best enjoyed the same day they are made.
If you’re not a fan of using lard, it can easily be replaced with butter.
